Salted Caramel Chocolate Chunk Cookies

What You'll Need

For Cookie Batter: 

¾ cup room temperature butter

1 cup of Brown Sugar

2 medium eggs

1 packet Sprinkles Salted Caramel Pudding Mix

1 tsp vanilla

1 tsp baking soda

½ tsp salt

2 ¼ cup All-Purpose flour

1 cup Dark Chocolate Chunks

 For Caramel Drizzle:

6 tbsp brown sugar

1 tbsp unsalted butter

2 tbsp whole milk

½ cup powdered sugar

½ tsp vanilla extract

 Directions

1. Preheat oven to 375 degrees F.
2. Line baking sheet with parchment paper and set aside.
3. In large mixing bowl, combine butter and brown sugar and beat well until combined.
4. Beat in eggs 
5. Add pudding mix and vanilla. Mix until incorporated
6. Add baking soda, salt, and flour. Mix until just incorporated
7. Fold in chocolate chunks by hand using a rubber spatula
8. Using a small ice cream scoop, evenly space roughly 1’’ drops of cookie dough on parchment lined cookie sheet (12 per tray). Bake for 7-9 minutes. 
9. When just golden, remove cookies and place onto a cooling rack.
10. In small saucepan, add butter and brown sugar and bring to a boil over medium heat, stirring constantly until sugar is dissolved and mixture is foamy.
11. Carefully whisk in milk and return to a brief boil, remove the saucepan from heat and stir in powdered sugar and vanilla. Stir with wooden spoon until caramel is smooth.
12. Once cooled, drizzle caramel over cookies and enjoy!
