Lemon Blueberry Loaf

What You'll Need:

  • 1 box (15.25 oz) Yellow Cake Mix
  • 1 packet Sprinkles Lemon Blueberry Pudding Mix
  • 4 large eggs
  • 1 lemon zest
  • 1/3 cup fresh lemon juice
  • 1/3 cup milk
  • 1/3 cup vegetable oil
  • 1 cup fresh blueberries

For Glaze:

  • 1 tsp milk
  • 2 tsp lemon juice
  • 1/2 cup powdered sugar

 

Directions:

1. Preheat oven to 350 degrees F. Grease two bread pans of choice.
2. Combine all ingredients except for Blueberries to a large mixing bowl. Mix on medium speed with hand mixer approximately 2 minutes until combined and fluffy.
3. Add the fresh blueberries and fold in with rubber spatula.
4. Evenly divide the batter between the two greased bread pans. Place in oven on middle rack and bake for 40-50 minutes. You'll know when it's done if can pierce with a toothpick in the center and it comes out dry!
5. Let bread cool for 15 minutes on the counter. Carefully remove from pans and place on wire cooling rack. 
6. Add 2 tsp of lemon juice, 1 tsp of milk and ½ cup of powdered sugar to a small bowl and whisk together to make a glaze. Evenly spread the glaze over the breads and let set for 30 minutes. Slice and ENJOY!
